Warning: Please wear personal protective equipment before handling detergent and descaling liquid, as contact with skin can cause chemical burns.
Pressing the off button on your commercial Winterhalter dishwasher will not drain the tank. To do that, you’ll need to run a self-cleaning cycle. Here’s how:
Step 1: Empty the dishwasher – Remove the dishrack from the machine and close the door.
Step 2: Press the cleaning button – Press and hold down the cleaning button (bottom left side of the panel) for about 2 seconds. Once registered, the button will turn white.
Step 3: Turn off the water supply stop cock & mains disconnector – Close and turn off the on-site water supply stop cock and mains disconnector.
Step 4: Prop open the door – Use the built-in latch to leave the door cracked open to dry overnight. This last step will preserve the integrity of the stainless steel and prevent corrosion.
At the end of every shift, you’ll need to hand-wash several removable internal parts.
Step 1: Empty the dishwasher – Before beginning, remove the washing rack so you can freely access the interior components.
Step 2: Remove the internal components – Unlock and lift out the upper and lower wash fields. Next, remove the filter cylinder and strainer. Once the strainer is out, the lower section of the filter will be visible. Go ahead and remove it now.
Step 3: Wipe down the interior – Collect and throw out any leftover food debris from the inside of the machine. Then use a soft cloth or brush to wipe down the interior surfaces, including the labyrinth below the door.
➡️ Note: Do not remove the red valve rod in the suction duct of the washing solution circulation system.
Step 4: Reinstall the internal components – With everything scrubbed and rinsed, reinstall the components in the reverse order in which you took them out.
Step 5: Leave the door cracked open – Use the latch provided with your dishwasher to prop the door open for drying. This protects the stainless steel from corrosion.
➡️ Note: Do not leave racks, dishes, or any other foreign object in the machine to dry overnight, as this could cause the stainless steel to rust.
At the end of the day, be sure to clean the screen with a damp, soft cloth to remove any leftover food debris and residue. Next, wipe down all exterior surfaces with a stainless steel cleaner and polish.
Once a month, you should take care to clean the dirt trap on your Winterhalter dishwasher. To do this, you must first turn off the water supply to your dishwasher.
Mineral deposits from hard water can build up in the boiler, lines and interior of your dishwasher through general use. Not only can the scuzzy residue look unappetizing, but it can also raise hygiene concerns.
Worse, neglecting the descaling process can cause the dishwasher’s heating elements to fail, ultimately leading to downtime most businesses can’t afford.
To prevent this, the manufacturer recommends descaling the interior of your dishwasher at least once a month or as often as needed.
Step 1: Turn off and empty the dishwasher – Please ensure that the dishwasher is machine-drained first, then pull out the suction tube and turn off the dosing device (if present).
➡️ Warning: Double-check that there is no detergent present before starting the descaler program. Drain and refill the tank without detergent, as toxic chlorine gas can be an accidental byproduct from mixing dishwasher detergent and descaler.
Step 2: Add descaler – When the machine is ready for operation, add the descaling solution to the inside of the machine.

➡️ 15.3 litres for medium, large and extra large dishwashers
Step 3: Go to the PIN menu – Press the i₁, the i₂, and then the keyboard symbol. Enter the pin number 1575 and punch the ✓ to finish.
Step 4: Start the descaling program – Press the icon with the symbol with the wavy lines and plate. Screen 28 should appear. From there, press the button with the wavy lines. It will flash before starting.
Step 5: Open the door when prompted – The machine will begin a 600-second countdown on the screen. Once time has elapsed and the start button stops flashing, open the door.
➡️ Note: If you don’t open the door after the 600 seconds have elapsed, the cycle will resume on its own.
Step 6: Add more descaler – If there are still limescale deposits present, go ahead and add more descaler to your dishwasher. Close the door and press the start button to resume the descaling process.
Step 7: Repeat steps 5-6 – Continue repeating steps 5-6 until the dishwasher’s interior is free from visible limescale buildup.
Step 8: Exit the descaling program – Once you’re happy with the cleaning results, press the button 28 to close the program. The machine will rinse and drain itself.
Step 9: Ensure the dishwasher is empty – Once the dishwasher has turned itself off, open the door to check to make sure that all water has been drained from the interior.
